Rice Pudding Recipe 
5 cups milk
½ cup rice
½ teaspoon salt
1/3 cup sugar
Grated rind of½ lemon
instructions
To prepare this Rice Pudding Recipe 3, first wash the rice, mix ingredients, and pour into a buttered dish. Bake three hours in a very slow oven, stirring three times during the first hour to prevent rice from settling. Should not brown the first hour. Stir at the end of the second hour. The milk should be like thin cream. If this pudding is to be served quickly use four cups of milk instead of five, but it is better to use five and cook longer. Serve with preserves.

600ml (1 pint) Milk
50g (2oz) Pudding Rice ( round grain)
15g (½oz) Butter
2 tbsp Sugar
¼ tsp Ground Cinnamon, Nutmeg or Mixed Spice

Pre-heat oven to 170°C: 325°F: Gas 3.
Place the milk, rice, butter and sugar into a greased 1.1 litre (2 pint) oven-proof dish.
Place into the oven.
Bake for 2-2½ hours.
Stir 2 or 3 times during the first hour of cooking.
Sprinkle with the chosen spice.
Continue cooking until a golden brown crust has formed.
Serve hot or cold, with a spoonful of jam or seasonal fruit.
we used to have it with home made strawberry jam

To add to the list of recipes:

4oz pudding rice
1 3/4 pints milk (full fat) (this is the slimming version!!!)
2-3oz caster sugar
1/2 oz butter
pinch salt
1/4 tsp grated nutmeg

Butter  a 3 pint pie dish
wash rice well
put rice in dish with milk and stand for 30 mins or so
stir in salt and sugar
sprinkle with flakes of butter and nutmeg
bake at gas mark 1/2 or 250f  ( lowest temp poss really..makes it really creamy) for 4-5 hours...the slower the better. I don't stir mine..

Oh and it's got to be served with a blob of home-made jam in the middle...or a drizzle of golden syrup...I did say this is the slimming version..

Doesn't have rum, but this is a very good recipe.

Bread Pudding

1 Package (8 Ounce) Cream Cheese, Softened
1/2 Cup Sugar
1/4 Teaspoon Cinnamon
2 Cups Milk
2 Eggs, Beaten
1 Teaspoon Vanilla
6 Cups Cinnamon-Raisin Bread, Cubed


Combine cream cheese, sugar and cinnamon.  Mix until well blended.  Add milk, eggs and vanilla.  Mix well.

Combine with bread cubes.  Let stand 10 minutes.  Spoon into greased 1-1/2 quart casserole.  Bake at 325 for 50 minutes.

no problem  Deb, I can substitute 1/2 c milk for 1/2 c Stroh's and be a happy little critter......thanks.  It sounds ike a great recipie.
